Per superare questo ostacolo, la ricerca sta sviluppando soluzioni all’avanguardia che uniscono la tecnologia dei biosensori alle enormi potenzialità del packaging intelligente. Una delle soluzioni più innovative in questo campo è rappresentata dai dispositivi basati sull’elettronica organica. A differenza della classica e rigida elettronica in silicio, questa tecnologia offre proprietà uniche e ideali per il contatto con il cibo: un’elevata flessibilità strutturale, la capacità di interfacciarsi con i liquidi e di rilevare molecole invisibili ai nostri sensi. Questi sensori riescono infatti a rilevare concentrazioni minime di quelle specifiche molecole generate dalla primissima degradazione ad esempio del pesce, lanciando un segnale ben prima che i nostri sensi possano accorgersene. In futuro, l’utilizzo di questi dispositivi, realizzabili anche con componenti biodegradabili o riciclabili, potrà contribuire a migliorare la sicurezza degli alimenti e ridurre lo spreco alimentare, in un’ottica di sostenibilità.
