Sempre più spesso sentiamo parlare di “sovranità alimentare” e veniamo invitati a consumare solo prodotti nazionali. Temi che inevitabilmente rievocano un certo passato, durante il quale, con le stesse formule, fu mobilitata la società italiana. Nel 1935, infatti, dopo l’invasione dell’Etiopia e le sanzioni da parte della Società delle Nazioni, il fascismo trasformò le cucine italiane in trincee, contro un presunto “assedio economico”: il regime provò a delineare una vera e propria cucina “antisanzionista”, fatta di riso, polenta, polli, conigli, karkadè e piatti dal sapore patriottico (come la trota salmonata alla Badoglio, il polpettone Macallè o il dolce alla Graziani). Una sorta di preludio alla cucina di guerra fondata sul niente, alla quale tutti dovettero forzatamente adattarsi a partire dagli anni Quaranta.
